About This Experience

Step inside a traditional wattle-and-daub kitchen to master Sri Lankan slow-cooking techniques. Scrape coconut meat using a foot-pedal bench (hiramanaya), press thick coconut milk by hand, roast spices until deeply fragrant, and simmer authentic jackfruit curry, tempered dhal, and gotukola sambol over glowing firewood embers.

"The soul of Demada Oya cuisine lies in the woodsmoke seasoning of unglazed clay pots. Cooking on firewood is an art of heat modulation, infusing curries with rich earthy undertones that cannot be replicated on gas stoves."
